Wild Garlic

Foraged from Somerset woodland floors for a few short weeks each spring. The leaves are broad, pungent, and unmistakable. Make pesto on the day it arrives. Stir it through butter. Wilt it into risotto. The season is measured in days, not months. Once the canopy closes, it's gone.
