Stripey Aubergines

Grown by La Sovrana on the Amalfi Coast, these are a different species from the uniform black aubergines in the supermarket. Violet and white striped, with fewer seeds and a creamier flesh that holds together under heat. Slice lengthways, grill until charred, finish with oil and salt.
